This research study evaluates the impact of an innovative oxygen-excluding spiral filter press on the quality, stability, and sensory properties of cloudy fruit juices produced from red-fleshed apples and blackcurrants. Pilot-scale processing trials were carried out over two harvest seasons and compared with conventional dejuicing technologies, including a horizontal filter press and a decanter centrifuge, to identify the advantages and limitations of the spiral filter press. A major focus was the influence of oxygen exposure during juice production on the preservation of oxygen-sensitive compounds, particularly (poly)phenols, anthocyanins, and ascorbic acid. Comprehensive physicochemical analyses were performed after production and during storage for up to 12 months at 3, 20, and 37 °C. These included measurements of sugars, organic acids, antioxidant capacity, rheological properties, juice color, and the composition of (poly)phenols and anthocyanins using UHPLC-DAD and UHPLC-DAD-QTOF-HR-MS/MS. To investigate anthocyanin stability in greater detail, isolated blackcurrant anthocyanins were subjected to controlled heating experiments. A D-optimal experimental design was applied to examine the combined effects of ascorbic acid, oxygen, sugar, and pH value on pigment degradation. In addition, volatile aroma compounds and sensory profiles were characterized by HS-SPME-GC-MS and multivariate statistical analysis to identify key aroma compounds associated with the different dejuicing technologies. Overall, this research study demonstrates the potential of oxygen-reduced processing to improve the nutritional, sensory, and storage quality of fruit juices.
